Sausages are something we don’t eat very often because we don’t like them cooked on a BBQ or in the fry pan as they just get so oily and gross.
The skin goes wrinkley and they get hard and if you go to eat them the next day they fat the solidified fat around them on the plate in the fridge.
But – they are also something we always have a packet of in the freezer because they are just so cheap and this meal is so easy to cook.
I made this recipe as an alternative to the packet mixes you can buy.
- 500g sausages
- 1 large sweet potato
- 1 can diced tomatoes
- 1 tablespoon minced garlic
- 1 tablespoon minced coriander
- 1 tablespoon minced thyme
- Minced chilli to taste.
- 1 can (use tomato can) of water
Throw it all in the slow cooker.
Stir it around a bit so the herbs are mixed in.
Leave it cook for 6 – 8 hours on low.
You can also use this in a heavy based pot on the cook top and it will take max 1/2 hour if you forget to put it on in the morning.
Serve on mashed potatoes.
This is such a great winter warmer recipe.
And the reason I used so many minced herbs is because I signed up to do a blogging challenge with Gourmet Garden but I read the dates wrong so I didn’t get to enter.
