This is a simple recipe from my Great Grandmother’s cookbook.
Apple Chutney
Ingredients:
- 450g apples (approx 4, I used green)
- 450g sultanas
- 450g tomatoes (approx 4)
- 225g brown sugar
- 1 cup apple cider vinegar
- juice 1 lemon
- 1 onion finely diced
- 225g crystallised ginger
- cayenne pepper
Method:
Peel apples, halve, then quarter. Slice quarters into small pieces like the photo above.
Halve tomatoes (I used Roma) then thirds. Slice into small pieces as per photo.
Finely dice onion.
Mix all ingredients in a large pot and boil for 1 3/4 hours.
Watch and stir occasionally to ensure it doesn’t dry out and burn.
Bottle and seal.
Store in a cool, dry place.
TIP: Make sure the jars you buy don’t have perspex sections on the lid or when you sterilise the jars and the lids they will melt. Luckily I like using the jam seals you can buy from woolworths/coles so the lids were just a finishing touch.
